"Living kimoto making" brewed with lactobacillus and yeast with living naturally harboring sake brewery is difficult and sure technique is necessary. We brewed Daiginjo with a rice milling commission of 45% with labor and time and spiritually "Making a raw kimoto". And the gem of the taste which made it refreshing in the rich body and taste with depth is born "Pouring of Minume (Minume no Ura)".
