Thanks to the blessings of nature from Mt.Rokko to the sea, Sawanotsuru has been sake brewing sake for 300 years. We named our company "Kobe1717" after our founding in 1717, expressing our desire to walk together with the scenery of Kobe and everyone for the next 300 years.
Sawanotsuru, founded in 1717 (Kyoho 2nd year), originated from the fact that the first owner of a rice shop started sake brewing as a side business. Since then, we have inherited the power of connoisseuring rice, and we continue to build authentic Junmai shu. Sawanotsuru, the birthplace of Yoneya with such an oath, has engraved a “*” mark on the product label, which is derived from the character of rice.
Hyougo is the birthplace of Yamadanishiki. "Kobe1717" uses 100% Yamadanishiki Hyougo.
Nada Miyamizu, one of Japan's top 100 famous waters, was discovered in 1840 (Tenpo 11). It is underground water that flows through the granite layers of Mt.Rokko, and is characterized by its high hardness, which is rare in Japan, where there is a lot of soft water. In addition, it is low in iron, which has a negative impact on sake brewing, and contains a moderate amount of active ingredients such as phosphorus and potassium, which promotes yeast fermentation. This creates a refreshing and sharp taste known as Nada sake.
